Baked Chicken Thighs with a Creamy Mushroom Sauce

Mushrooms and cream has always been one of my favorite combinations. After nearly two weeks at home, I was craving for some simple and comforting flavors. The slightly salty crispy chicken skin, sweet onions and the perfect amount of garlic notes over a bowl of plain boiled rice, checked all the boxes for me. You can add more textures by adding some broccoli florets or even spinach.

Skin-on Chicken Thighs 5-6
Olive Oil 1 tbsp
Mushrooms 300g
Onion 1 medium
Garlic 5-6 cloves crushed
Salt as per taste
Pepper as per taste
Italian herbs 1/2-1 tsp
Chicken Stock 1 cup
Cream 300 ml
Parmesan 1-2 tbsps
