
Do you also get bored of repeating the same routine recipes for dinner? These Chicken Asparagus roll ups are easy to prepare, taste great and look amazing. If you’re not a fan of asparagus (Why though?), you can roll marinated tender chicken breasts around any vegetables of your choice. Some of my favourites are peppers, zucchini, red onions and sun dried tomatoes. You can season these chicken roll ups with whatever you fancy. For this recipe I’ve chosen a lime and herb marinade. Serve them with a side of boiled rice or mashed potatoes and you’re ready to serve up a sophisticated looking dinner in 30 minutes!
Ingredients:
- Chicken Breast Fillets 4
- Asparagus 12; long and thin preferred
- Mozzarella Cheese 1/2 cup; sliced into sticks or shredded
- Olive Oil 1/4 cup + extra for seasoning asparagus
- Lime Juice 1/4 cup
- Garlic 2 cloves; minced
- Mixed Italian Herbs 1 tsp
- Crushed Chili Flakes 1/2 tsp
- Salt to taste
- Pepper to taste
Method:
Slightly flatten the chicken breasts fillets using a steak hammer.
Mix all the remaining ingredients, except for Mozzarella cheese, in a shallow bowl to make a marinade.
Dip Chicken fillets into marinade and let them sit for around 5 minutes. You can also do this step a night before to save time and allow the chicken to absorb lots of flavor.
Prepare asparagus by snapping off the tough ends of the stalks. Season with olive oil, salt and pepper.
Line the Chicken fillets on a work surface, place 3 asparagus and 2 mozzarella sticks at the centre of each Chicken fillet. Roll and secure with a tooth pick. Brush any remaining marinade liquid on top of the rolled fillets.
Bake chicken roll ups at 200 ℃ for 18-20 minutes or until the juices run clear and internal temperature measures 65 ℃.
